Our New Sparkling Rosé: A Unique Blend and a New Challenge Unlocked

At Vino Lovrec, we’re always eager to explore new possibilities in winemaking. This year, we took on an exciting challenge: creating a sparkling rosé from red grapes using the traditional method. We’re thrilled to share the story behind this special wine with you!
A Blend of Our Three Red Grapes
For the first time, the base wine for this rosé was made from a blend of all three red grape varieties we grow—Cabernet Sauvignon, Merlot, and Syrah. We harvested these grapes a bit earlier last year, specifically to use them as the base wine for our sparkling rosé. The result? A semi-dry rosé with a fresh and lively character.
Every Bottle Is Unique
One of the most fascinating aspects of making sparkling wine with the traditional method is that each bottle is slightly different. After disgorgement, we add a dosage—a sweetening step that replaces the predicate wines we used to produce when the climate was different. These days, producing predicate wines is nearly impossible, though occasionally one can still be made here and there. But sparkling wine? We can make it every year!
This uniqueness contrasts with the tank method, where all bottles turn out the same. While the tank method has its own advantages, we love that with our approach, every bottle has its own character and story to tell.
Our Special Sparkling Wine Cellar
Our sparkling rosé is stored in a special cellar dedicated exclusively to sparkling wine. When we bottle after fermentation, the wine needs to be as cold as possible to minimize CO₂ loss. Interestingly, during the filming of the video we were working in warmer conditions (when the fermentation was in process) so that fermentation doesn’t stop prematurely. The outside temperature was around 20°C, which is ideal. We’re careful not to overdo it because extreme heat could cause oxidation, which would harm the wine’s quality.

At the heart of everything we do is our commitment to organic viticulture. We believe that respecting the natural environment and nurturing biodiversity in our vineyard are essential to producing wines that truly express their terroir. Our organic approach means we avoid synthetic chemicals and pesticides, focusing instead on natural methods to maintain healthy vines and soil.
This philosophy extends into every step of our winemaking process. By working closely with nature and embracing traditional techniques, we create wines that are authentic, vibrant, and full of character. Our sparkling rosé is a perfect example of how organic principles and innovative spirit come together to craft something truly special.
